Buffalo Caciocavallo

Aged, stretch-curd buffalo cheese

The irregular spherical shape and the string that ties this aged stretch-curd buffalo cheese make it unique and recognisable. The pale yellow rind is thin and smooth and sometimes has white-greyish mould. The paste is smooth and even, and at times has rare, tiny holes. The texture is soft and the sweet taste is reminiscent of cooked butter.
